FUN FACT: Although they share similar names, macarons are VERY different from macaroons. A MACARON (ma·kr·oon) is a meringue-based sandwich cookie, whereas a MACAROON (mah·ka·roon) is a small biscuit cookie normally made with shredded coconut. The word ‘macaron’ shares a root word with ‘macaroni’, which both mean fine dough.

 

From Almond Flour to Dessert Tray: A Delicious Journey

Every macaron starts its life as a combination of almond flour, egg whites, and super-fine confectioner’s sugar. The egg whites are whipped into a thick, fluffy texture called a meringue, which gives these cookies their iconic gentle crunch. Once these eggs have reached a certain level of stiffness, chefs will carefully fold in the almond flour.

This step is why macarons are so tasty, but also challenging to make. The final cookie relies on having a perfect blend of crispness, softness, and crunch. A good macaron is light and airy while still offering a lovely crackle as you bite into it.
